Holes, blisters and ears....I call that progress!

We moved onto sourdough today and with it scored the triple trifecta.....

Ears galore. I LOVE scoring sourdough, so much easier than yeasted doughs to get that pop on top of the loaf.

As per usual, nothing in moderation today. We each made 30+ loaves - 40% sourdough, 70% sourdough, stiff levain, liquid levain, same day, retarded, single feed, double feed..... totally confused again in the taste test but it was all guaranteed yumbo.
I can now say I've achieved all my objectives in coming to bread school, but no way I'm going home just yet. Six more sourdough variants on the menu for tomorrow. Plus I scored four "nices" on the Mac-o-meter. Still no "awesome" but improving!
